Townline BBQ: Ribs Served Up Texas Style in Sagaponack

Townline barbecue serves up its specialties Texas style.

Townline BBQ in Sagaponack, offers a casual, family friendly atmosphere with affordable prices and a real ribs joint atmosphere. After traveling to Texas and Kansas, owner Mark Smith and executive chef and partner Joe Realmuto decided that authentic Texas BBQ, with a little bit of pork on the menu, was the winning concept. Traditionally Texas BBQ features meat smoked with dry rub and no sauce; BBQ sauce is served on the side.

Smoked meats are the focus of the menu with a small section of sides to choose from including: baked beans, cole slaw, potato salad, greens, French fries, cornbread and pickles. Townline smokes their meats – brisket, chicken, pork, Texas link, beef and pork ribs — and serves it with two house-made sauces.

Customers order at the counter, pick up their BBQ at the pick up counter and either eat-in at one of the tables or take it home.

A full bar offers draft beer, wine and cocktails. As well, Saranac root beer is on draft.

Desserts have a southern twist as well with specialties such as icebox cake, fried cherry pie and banana pudding.

From the rustic exterior siding made from reclaimed barn wood to the plywood booths, Townline’s décor is simple and unassuming. Wood is the predominant material throughout the space accented by galvanized metal chairs and barstools.

A comfortable, unpretentious atmosphere is sensed upon entering, suggesting customers to “leave their titles at the door.”
To emphasize the basics of enjoying the “Q” with one’s hands, a hand washing station holds court in the center of the dining room.

As well, to allow ease of taking your leftovers home, a wrapping station is present in the dining room.

The menu is hung over the ordering counter on a black chalkboard featuring magnetic letters listing the items. A fireplace is situated in the bar area for colder months, while French doors flank the back of the dining room offering an open-air deck overlooking the adjacent farmland.

An open kitchen offers customers the ability to see the pit master working the smoker, while aromas waft into the dining room.

Wherever possible at Townline BBQ an effort is made to keep it “green.” They are composting and using the compost to supply local farms. From the paper products to the dishwasher, they are committed to being conscious to the environment.

The restaurant  is owned and operated by Honest Management Company, which also operates Nick & Toni’s, Rowdy Hall and La Fondita.

Townline BBQ is open seven days for lunch and dinner from 11:30 a.m. and 10 p.m. Off premises catering is also available.

    Hi Joe,
I have Ina’s Barefoot Contessa show on grilling on, was working in the kitchen, and didn’t capture your delicious sounding BBQ sauce recipe. I ran to the computer, and FOOD-TV doesn’t have it, at least that I can find. Would you be a gem and e-mail me the recipe?! Thank you SO much!
